Bean to Bar Masterclass in York: Make Chocolate at York Cocoa Works

At the heart of York’s winding medieval streets, the Bean to Bar - Chocolate Making Masterclass at York Cocoa Works transforms cocoa curiosity into hands-on craft. Located at York Cocoa Works, 10 Castlegate in York, England, this four-hour workshop walks you through every stage of chocolate’s transformation: from raw bean, through flavor development and tempering, to moulding, packaging and the technical worksheets that turn a one‑off class into a repeatable skill. You begin by learning how different processing stages unlock specific flavor notes—acidity, fruitiness, and roast—before blending tactics let you dial a recipe toward delicate floral highs or bold earthy cocoa. The class emphasizes practical technique: winnowing, refining, conching demonstrations, and precise tempering on real equipment. Instructors guide small groups through reproducible workflows so you leave confident recreating your signature bar at home. What sets this offering apart is its focus on personal recipe-building. Rather than following a fixed formula, every participant crafts a unique 500g chocolate blend to take home, complete with packaging and technical worksheets. That makes the workshop more than a tasting: it’s a micro‑factory experience that teaches production thinking—useful to cake makers, home artisans, or anyone curious how commercial chocolate behaves in a kitchen setting. York’s industrial chocolate heritage colors the experience. The city gave rise to famous houses such as Rowntree’s in the 19th century, so learning chocolate craft in Castlegate feels like stepping into a living local tradition. The Academy operates inside an active production environment, so expect the hum of machinery and an authentic behind-the-scenes feel; the team asks participants to report to the Academy at York Cocoa Works, 10 Castlegate 5 - 10 minutes early to settle in. Practical details are elegantly simple: the session lasts about four hours and suits beginner to intermediate makers aged eight and up with supervision. Bring clothes you don’t mind getting chocolate on and tie long hair back; aprons and hairnets are available on request. The class sells chocolate refreshments before and after the workshop and offers a discount on chocolate ingredients for attendees, handy if you want to pass along the tools to continue experimentation. For visitors to York, this masterclass makes a memorable indoor activity when weather or schedules limit outdoor plans. It combines tactile learning, regional food history, and take-home results—a compact, hands-on way to leave the city with a story and a bar you made yourself. Groups are intentionally small—maximum group size is 8—so you get individual feedback during hands-on steps. The workshop welcomes ages 8–108, and while it’s accessible to beginners, it runs in a real production space with active machinery.
